Ingredients for making coconut barfi-
– Grated Coconut – 2 cups
-Chinese- 2 cups
Cardamom powder – 1/2 teaspoon
Chopped cashews – 1/2 teaspoon
Ghee – 2 teaspoon
Method of preparation of coconut barfi
To make coconut barfi, first heat ghee in the pan and add cashews to it and fry it till it becomes golden and keep it aside. Add coconut and sugar in the same pan and cook on a medium flame while stirring continuously. When the water from the coconut stops flowing, add cardamom and cashews to the pan and mix well. Turn off the gas when the coconut becomes golden. Put the lubricant on a flat plate and add coconut in it and spread it well. After two to three minutes, with the help of a knife, cut it into the shape of barfi. Allow the barfi to cool completely and then store it in an air tight container.
